A palette of tastes and colours !
As the grapes from my vineyards are harvested and fermented individually, each can express their personality. I rediscover each year the classics which form the Savary de Beauregard wines of whites, rosé and reds. Also, I frequently find some pleasant surprises amongst my favourites which I cannot keep secret, so I have developed the 'Vignoble Savary' wines in order to share them with you.
The 7 grape varieties enable me to produce wines that are rich and original:- Traditional wine making and aging in oak barrels for the cabernet sauvignon and chardonnay (cuvee Libertine).

100% Picpoul.
Fruity White
Region : Languedoc.Appellation : AOP Picpoul de Pinet.
Grape variety : Piquepoul 2012.
Soil : Clay-chalk, vineyard next to garrigue.
Climate : Mediterranean. Swept by northern tramontate. Afternoon summer breezes.
Age of the vines : 10 years +.
Density : 4.000 vines/Ha.
Cutting : Double royat.
Cultivation : Traditional with managed treatment programme.
Yield : 25 to 40 Hl/Ha.
Vinification : Pressed direct without maceration. Deposition by chilling. Vinification at low temperatures.
Service : 10°.
Gastronomy : Aperitif-fish-seafood-dessert.
Presentation : Bottle type "Alsace" white 75 cl. 43mm Nomacork synthetic stopper. Boxes of 6 bottles (2X3 flat).
Degustation: Pale, golden hue. Bouquet citrus and white fruit. Light and refreshing. Agreeable acidity which awakens the bouquet.

Seductive White

Cultivation : Traditional with managed minimum treatment programme.
Yield : 30 HL/Ha.
Vinification : Traditional. Vinification between 14° and 16° Stirring.
Service : 10° to 12°.
Gastronomy : Aperitif-fish-Foie gras-Rabbit-Chinese dishes-Roquefort and goat cheeses-dessert.

Mathilde : Robust rosé

Grape variety : Grenache - Syrah - Cinsault.
Cuvée : "Mathilde" 2012.
Soil : Clay-limestone.
Climate : Mediterranean. Sunny hillside Swept by northern tramontane. Afternoon summer sea breezes.
Cultivation : Traditional with managed minimum treatment programme.
Yield : 40 to 50 HL/Ha.
Vinification : By straining. Maceration with skins. Extended fermentations with temperature control.
Service : 10° to 12°.
Gastronomy : Aperitif-Mildly spiced meals-dessert-A wine to drink at any time of day.

Petite Cour : Silky red

Grape variety : Cabernet - Grenache - Syrah.
Cuvée : "La Petite Cour" 2012.
Soil : Clay-limestone.
Climate : Mediterranean. Sunny hillside Swept by northern tramontane. Afternoon summer sea breezes.
Cultivation : Traditional with managed minimum treatment programme.
Yield : 45 to 55 HL/Ha.
Vinification : Traditional. Extended fermentation at 25° and 28°. Final bleeding and straining. Kept in oak barrels for 4-8 months. Fining and light filtration.
Service : 18° to 20° - best after 1 hour decanted.
Gastronomy : Charcouterie-red meats-spicy dishes-cheeses.
Presentation : Bottle type "Bourgogne" 75 cl. 43mm Nomacork synthetic stopper. Boxes of 6 bottles (1X6 flat).
Degustation : Rich, ruby colour. A fine bouquet, rich and complex in spices and ripe fruit. Long and well balanced final taste.

Libertine : White wine with character

Grape Variety : Chardonnay.
Cuvée : "Libertine".
Soil : Clay-limestone-marl.
Climate : Mediterranean. Sunny hillside Swept by northern tramontane. Afternoon summer sea breezes.

Density : 4000 vines/Ha.
Cutting : Royat double.
Cultivation : Traditional with managed minimum treatment programme.
Yield : 25 to 30 HL/Ha.
Vinification : Fermentation in new oak barrels. Agitation/stirring.
Service : 12° to 14°. Best after 1 hour decanted.
Gastronomy : Fish in sauce-Meat in pastry-Foie gras-cheese-chocolate desserts.
Presentation : Bottle type "Bourgogne" 75 cl. 45mm natural cork stopper. Boxes of 6 bottles (1X6 flat).
Degustation: Rich, golden colour. Bouquet complex with dry fruits, white fruits and flowers. Exceptionally smooth and creamy.

Sofia : Rich, heady red

Grape Variety : Cabernet - Sauvignon.
Cuvée : "Sofia".
Soil : Clay-limestone-marl.
Climate : Mediterranean. Sunny hillside Swept by northern tramontane. Afternoon summer sea breezes.

Density : 4000 vines/Ha.
Cutting : Royat double.
Cultivation : Protection raisonnée.
Yield : 35 to 40 HL/Ha.
Vinification : Traditional. Controlled temperatures at 20 to 25°. Maceration after fermentation for 4 weeks. Kept in barrels which are a minimum of 2 years old, for a period of 1 to 2 years. Light filtration.
Service : 18° to 20°.
Gastronomy : Red meats-Game-Charcuterie-cheese-chocolate desserts.
Presentation : Bottle type "Bourgogne" 75 cl. 45mm natural cork stopper. Boxes of 6 bottles (1X6 flat).
Degustation : Dark, rich red with tawny undertones. Bouquet preserved red fruits and mocha. Soft tannins with a certain spiciness.

Yield : 35 HL/Ha.
Vinification : Traditional. Extended fermentation at 25° and 28° Final bleeding after fermentation for 4-5 weeks of hand "pigeage".
Service : 18° to 20° best after 1 hour decanted.
Gastronomy : Charcuterie-Red meats-Spicy dishes-Sweet and sour dishes-chocolate.
Presentation : Bottle type "Bourgogne" 150 cl. 45mm natural cork stopper. Boxes of 6 bottles (2X3)
Degustation : Rich, deep red. Hints of violet and cocoa. Bouquet rich and complex notes of red and ripe fruits. Long and well blanced final taste.
